We’re used to thinking of Italian food as pasta, pizza, olive oil, and simplicity. But the last few years have shown that even traditions can breathe anew.

Returning to the roots – with a modern touch

In many Italian cities, young chefs are rediscovering the recipes of their grandmothers, but reinterpreting them through the lens of our time.
Pasta dough is made from ancient grains, tomatoes are grown naturally, and cheese comes only from local farms. Yet the presentation is minimalist – almost architectural. It’s not just food anymore – it’s a philosophy of respect for the past.

The new simplicity

In the past, a plate was meant to “show everything” – abundance, generosity, aroma. Now, it’s the opposite. Modern Italian cuisine seeks purity of taste: less salt, less oil, less noise. The focus is on the ingredient itself – and its natural voice.
I often visit small restaurants where pasta is served with just three ingredients – and that’s enough to feel perfection.

Gastronomic Italy is no longer closed within its borders. In Rome, I once tried a carbonara with Japanese miso – and it felt surprisingly natural. In Milan, chefs combine Sicilian spices with northern truffles. Italy doesn’t lose itself – it becomes even more alive by absorbing the world around it.

The age of sustainability

Today, cuisine is not only about taste – it’s also about responsibility. Many restaurants focus on seasonal produce, reduce waste, and collaborate with local farmers. It’s not just a trend, it’s a new ethic – and perhaps the most beautiful expression of modern Italy.
Italian cuisine has always been about life, joy, and people. But today, it’s also about awareness. And if you want to truly understand Italy – don’t start with museums. Start with lunch at a small trattoria, where an old dish is reborn in a new light. That’s where the real Italy lives.
